I need to know, in light of this link and years of not knowing, what is meant by "the holy[Catholic] catholic church.

The word "catholic", as you know by now, literally means "universal". It was considered one of the four "marks" of the Christian Church, along with "one", "holy" and "apostolic". Each of these terms had a specific meaning.
"One" means there are not multiple versions of the Christian Church, just orthodoxy and heresy.
"Holy" essentially means "special, set apart by God".
"Catholic" means that anyone can be part of the Church. It is not nationalistic, racial or tribal.
"Apostolic" means it has a continuously inspired tradition leading back to the original Apostles of Christ, who were commanded to spread the "good news" to "the ends of the world".
After the Reformation, there were two kinds of "Christians" in Western Europe. One adopted the name "Protestant". The other clung to the name "Catholic", giving the word a second, esclusive meaning. As a result, it is hard for some of the more hard core Protestants to use the Nicene Creed. It's simply too hard to explain what "one" and "catholic" really mean in the middle of prayer. I remember from childhood that this is part of the Methodist statement of faith. When I asked my dad about it, he didn't have an answer. If Methodists believe in the Holy Roman Catholic church, why are they Methodists instead of Catholics? What, precisely, do they believe about RCC?
There are many different beliefs within the Methodists religion. Many of them live by the Word of God. Some have strayed and have compromised the Word. They are the ones that will say they believe in anything just to show they're willing to do anything to bring ones to their church. That's all they're interested in.

The Holy Catholic Church mentioned in scripture and in the Apostles Creed and the Nicene Creed etc. is the universal church as founded by Jesus and the Apostles.
The Roman Catholic Church is the Roman version of the church, founded by the Emporer Constantine to unite his Empire under one standard religion.
To make it acceptable to the many and varied nationalities and beliefs, over a 1,500 year period, names, customs and practices from many different religions were "christianised" and grafted onto to Christianity. It has been estimated that 70% - 80% of the doctrines and ceremonies of the Roman Church have come straight from Non-Christian religions including Pagans and Idol worshippers.
Because Rome ruled the known world, their version of the faith became the largest and most influential and Christians who disputed Rome's version were branded as "heretics" by the authorities and persecuted and discriminated against.

Curiously, the printed program for the funeral liturgy did not contain the usual U.S. Bishop’s statement on the guidelines for receiving the Holy Eucharist. These guidelines are that only Catholics may receive and Catholics who do receive must be property disposed. Moreover, neither presiding Cardinal O’Malley nor any priest gave any oral statement about the guidelines before the distribution of the Holy Eucharist. Giving these Catholic pro-abortion politicians the extraordinary benefit of the doubt, perhaps they were in total ignorance because no Pastor, priest or Bishop ever warned them as they should have. Nevertheless, even though they may have never received any warning, still their reception of the Holy Eucharist was objectively unworthy and an objective sacrilege against the Holy Eucharist.
