My uncle is being ordained as a Catholic Bishop in September, and not having been raised Catholic myself, I have no idea what an appropriate gift is.
The best gift you can give a newly ordained bishop is an endowment fund in his name, proceeds going to either the Diocese itself or the seminary of the Diocese.
Where I live, our Diocese has endowments called "burses" (which is a Catholic term for a cardboard envelope used in Mass). They can be as little as $5. We have more than 250 of them, and there is one named after each of our Bishops, as well as many beloved priests, families, parishes, etc. So I would call the Diocese and ask if there is such an endowment program. Then either start the burse/endowment in your uncle's name or contribute to the one that exists.
This is a gift that will last FOREVER, because the principle is never spent; only the interest. It's a very nice thing to do that recognize your uncle's new role in his assigned Diocese.
(I do hope you'll go to the installation -- it's not every day that one gets to witness that!)

Don't just google it because I did that... came up with of the virgin Mary of something, but I don't understand still WHAT it means.
A protestant exiled to the continent under Mary I... coming under the same class (marian) as a Catholic Bishop in the Lords just doesn's make sense to me!
That's because it's two different Marys.
The Catholic Mary (Marian bishop) refers to the Virgin Mary, the mother of Jesus.
The Protestant exiled by Mary refers to Mary I, the daughter of king Henry VIII, who tried to restore England to Catholic rule when she took power after the death of her father. She was so repressive she earned the nickname "Bloody Mary."

BERLIN (AP) — The head of Germany’s Roman Catholic bishops said in an unusually forthright Good Friday statement that the church in the pope’s homeland failed to help victims of clerical sex abuse because it wanted to protect its reputation.
A victims’ group that runs a new hot line in Austria said that dozens of people had reported new allegations of sexual abuse by priests and Catholic church employees, and about 100 others had described verbal or physical mistreatment.
In Italy, the prosecutor who oversees sex-crime cases in Milan told the Il Giornale newspaper that there is a long list of priests who are under investigation for alleged sex abuse. He did not elaborate.
