i just wanted to know since I'm Catholic.
Well since Martin Luther didn't start his protestant reformation movement till the 1500's ,I would suggest most if not all knights were catholic.The Templar Knights were a military and religious order founded in Jerusalem during the crusades.Knights who established(1118)a religious community to protect pilgrims in the Holy land.As I said being that the christian church was catholic at that time and pretty much the only game in town,yes, I would say the majority were indeed catholic. Part of the purpose of the Knights of Columbus is to do good and to have Catholic fellowship. They work to build and strengthen the Church in our communities, among other things. Someone who is not Catholic, would probably not have this aim.
There are many,many different religious organizations and their right to exist is protected by the US constitution. A similar, protestant oraganization, are the Freemasons. They allow only Protestants, and by my uneducated understanding, are invitation only. Since I am a HUGE fan of democracy and support the right of people to associate freely with each other, I am a big supporter of their existance, too.
You don't have to answer them all (but if you can that would be awesome). I would prefer if you addressed the Catholic Church part first if you can only answer one.

Well you should probably start out with the amassing of a large amount of knights in western europe by Charles Martel to combat the invading Muslim armies.
After the Muslim armies had been beaten back for now, there were a large number of trained knights with nothing to do. Basically they caused a lot of problems for the common individual. Pillaging, raping, overall absurd activity.
The Catholic Church employed the use of Relics, mainly, to literally put the fear of God into them. We see now the employment of knights in the direct service of Christ and then of course, the Crusades.
Pope Urban II declared "God wills it" and says that to kill an infidel is to absolve all your sins, puts a cross on the shields of medieval knights and they are off to the Holy Land.
Knights who worked for a lord had to promise a certain amount of time of war service to the lord who in turn had to promise to his lord a certain number of troops leading all the way up to the King.
I am Catholic, unmarried, and have a child. The child and her mother and I all live together and we are planning on getting married. Can I still join the Knights of Columbus now that I have had a child out of wedlock?

What's past is past. The Knights of Columbus will not judge you for sins of the past - so long as you've made efforts to make things right.
Clearly, you have no abandoned the child or the mother - and that's good.
The one thing I can see the K of C frowning upon is the fact you are all living together as a family even though you are not yet married. This is considered "living in sin" according to Catholicism.
Perhaps you might consider holding off joining the Knights of Columbus until after you are married.
I don't know much about the Knights Templar. What I do know is that they were a group of men who stood to protect the Church in the crusades. What happened that they were not trusted anymore by the Church and were named as heretics?
*The Pope recently apologized on the Church's behalf to the Templar admitting it was a huge wrong-doing.
The Templars had become wealthy and powerful much to the anger, fear and jealousy of the French King, aka one of the most powerful man in Europe at the time. Much like during the Jew burnings (also condemned by the pope), a phony crime was fabricated and pinned on the victims in order to justify taking their property. It turns out that the Pope at the actually wanted to only suppress the Templars; which is nothing like what the French actually did to the order.
