Someone told me that during Lent all Catholic churches hold the same mass services that they take from a particular book - anyone know what it's called?

What you're thinking of is the missal. It gives the appropriate liturgical prayers for the day, as well as the readings and gospels to be read.

However, the book which governs that is what determines the ACTUAL process of the mass and how all the churches of the latin rite manage to have exactly the same mass (not called a service). This book is called the GIRM, which stands for "The General Instruction for the Roman Missal", and describes all the proper rules and forms of the mass for the sacramental execution of worship
