I heard some mention that there was/is a Catholic Ivy League of schools that includes these top Catholic colleges.

Time Magazine had an article a while back on "The Catholic Ivy League". It is not a real league but merely their way of saying that the following Catholic colleges were considered the best in the nation:

Notre Dame
Georgetown
College of the Holy Cross
Fordham
Boston College
St Louis University

I'm getting ready to apply to a college and am looking for a Catholic education, I either want to major in psychology or foreign affairs.
Which school would you suggest USF or Holy Cross? If not either or these schools then what?
Also I have a cumulative GPA of 4.06 and high SAT and ACT scores.

Holy Cross is a higher ranked school than USF - harder to get into as well. Why not try for both of them, if you like them both? See where you get in, see what aid they offer you, and then decide.

For foreign affairs, you may want to give a serious look at Georgetown. It's in DC, so ideally located for that field, and it has a very strong program. It's also Catholic.

Others you may like would be Boston College and Fordham. Fordham is right in NYC, which is where the UN is located, so you could gain some interesting exposure to foreign affairs in that way. BC is just a really great school.

I am from the Boston suburbs and attend a Catholic High School. Many of my high school friends plan to go to either BC or Holy Cross since they are so close to home. I visited HC and really fell in love with the place. However, my parents really want me to go to Notre Dame. But I have zero interest in living in South Bend, Indiana and have told them that. They think ND is much more prestigious but I disagree. I don't think it really matters that much where you go at this level of college. I think that either BC or Holy Cross are just as good academically as Notre Dame. I would like to hear others' opinions.

I go to a catholic high school in PA and have taken all honors courses freshman and sophmore year and taken 2 ap courses junior year with honors latin chem & calc I and 2 ap courses senior year with other honors courses such as calc II

my rank is about 10 / 150ish
i have a 2020 sat (690 math/680 writing/650 reading)
gpa of 3.84 with a curve/ 3.68 without
varsity lacrosse for soph/junior/senior year
model un junior year
hospital volunteer junior year
senior class vice president
summer camp counselor for 4 straight years

You stand a decent chance at all three as others have noted. All three are extremely similar with Holy Cross reputed to having the toughest academic workload. BC is probably slightly harder to get into and Notre Dame is probably a little easier due to its undesirable location in the boonies of Indiana.
