A few days before my Mum died, she specifically asked for an Irish Catholic funeral - stumping us all (as she isn't Irish). I've found some stuff online, but would be grateful of a more comprehensive breakdown of the differences before we have to arrange the funeral.
Mostly the character of the prayer vigil.
A Catholic funeral is broken into three parts.
The Vigil. The night before the Requiem Mass, a prayer service is celebrated. Eulogies and/or the rosary may also be said at this time. The Irish culture call this a wake. Others used to be called the Rosary. A reception with food may follow.
The Requiem Mass. A full Mass with Scripture read and explained and Eucharist (Holy Communion) received with extra funeral prayers.
The Burial. A short final prayer service at graveside. A reception at someone's home with food may follow.

I've noticed many describe or identify them selves as Irish Catholic in jokes or any regular conversations. Why is that? Are there other Irish regions with opposite characteristics? I'm just wondering since I never hear of people identifying them selves as Canadian Christian, or Mexican Catholic.
Because many Irish are also Protestants. The Irish Catholics are those from or whose ancestors are from the main part of Ireland, and the Protestants hail from Northern Ireland (which is part of Britain and has been for centuries). In actuality, the Protestants' ancestors were mostly Scottish Presbyterian immigrants who settled Northern Ireland. In America, they became known as the Scotch-Irish and settled largely in the South and in Appalachia during the 1700s.
The Irish Catholics immigrated later on in the 1800s and even into the 1900s, settling largely on the East Coast or in the Midwest.
I was wondering what I should paint for my grandmother? Her birthday is coming up and I would like to do something that has to do with being Irish Catholic, but not a celtic cross and not a landscape. Any ideas?

I hear a lot of people calling themselves "Irish" Catholic & while I'm not Catholic I do know a bit about Catholicism until now lol. Can some1 please clarify?
The difference among them is mainly in their respective way of practicing their religion, and this is probably a very particular case about peoples of different heritage but belonging to the same church denomination in which religion, rather than being a common ground, was instead a divisive issue.
I've recently read in a book how in the late 1800s and early 1900s many Irish parish priests (which were the majority in the US Catholic church) didn't like their Italian parishioners very much and kept a hostile attitude towards them, sometimes to the point of refusing to baptize their children or celebrate their weddings. That drove many Italian immigrants away from their religion, and some even switched to Evangelical or Presbyterian churches, who were much more welcoming to them.
